A really tasty alternative to traditional guacamole. Almost half the carbohydrate is as fiber and there is less than 1 gram of fat in each tablespoon.
Makes 1 cup or 16 servings
1 (14 oz) can artichokes drained
1 tsp lemon juice
1/4 cup chopped onion
3/4 tsp chili powder
1 clove garlic
1/2 tsp ground cumin
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
Combine all ingredients in a food processor and pulse until the seasonings are blended and the artichokes are chopped but still a little lumpy Place in a bowl and refrigerate for one hour . Serve with corn chips as an appetizer or as a topping on shredded lettuce with chopped tomato and a few black olives.
