A tablespoon of Basil Pesto Oil carries only a small amount of basil and is not high enough in fiber to replace a true serving of vegetable. On a hot summer day I serve it with 1-2 slices of good bread instead of cooked potato or rice. Pour a small amount on your plate and dip the bread into the oil . You can also use it to make amazing garlic bread - cut a whole loaf of Italian or French bread in half, brush each side with the oil and grill, 4-5 inches from the flame ( oil side down ) for 2 minutes or until it is crisp and crusty but not burned.
To make a delicious summer tomato salad : toss 2 cups chopped summer tomatoes with 1 cup cooked pasta shells and drizzle with a small amount of the oil for flavor.
2 cups Olive oil
1 cup minced basil*
2 garlic cloves minced* ( more if you like the taste of garlic)
1/4 teaspoon salt
1.Combine all ingredients in a glass bowl and stir . The oil can be used immediately but it will taste better if it sits for at least an hour.
*If you have a food processor put all the ingredients in whole and process for about 2 minutes until well blended.
