Serves Four as an appetizer
2 whole pears
1 tbsp olive oil
Fresh rosemary, 1 tbsp chopped
1 ounce soft cheese such as camembert or 2 wedges Laughing cow lite cheese
1-2 tablespoons of your favorite balsamic vinegar
Preheat the broiler to high with rack set about 4 inches from the heat. Cut each pear lengthwise into four even slices. With the tip of a sharp knife gently carve out the seed and core and immediately brush with the olive oil to prevent browning. Rub with the chopped rosemary and broil 10 minutes. Serve warm, two slices on a plate topped with one- fourth of the cheese and a drizzle of balsamic vinegar.
