Cucumber Caper Cups
Ingredients

Cucumber Caper Cups

Makes 24 appetizers
12 Wonton wrappers, cut in half
Spray oil
1/4 cup Crème Fraiche
1 tbsp small capers plus 24 for garnish
1/2 cup finely chopped seedless cucumber
2 ounces smoked salmon( cut into small pieces) optional
2-3 radishes grated

Cooking Instructions

Preheat oven 375 degrees. Spay a mini muffin cup tin with oil. Press each strip of wonton into pan. Bake until crisp 5- 7 minutes. Cool. Make ahead and keep in airtight container for 5 days.

Mix together Crème fresh with capers and cucumbers. Assemble remaining ingredients. Place a small amount of crème fresh into baked wonton, top with a small amount of salmon, one caper and garnish with radish. Can be assembled and refrigerated one hour before serving. Or, make a plate of all the ingredients and let your guests make their own creations.

Approximately 29 calories per "cup"
