Edamame is another name for soybeans. They can be found frozen in the freezer case, buy them with the shell removed, they look a little like a lima bean.
Makes 1 cup
1/2 pound frozen edamame, thawed about 1 1/2 cups
1/4 cup smooth peanut butter
1/4 cup water
1 tsp lemon juice
1 clove garlic
1/2 tsp salt1/2 tsp ground cumin
1/4 tsp ground coriander
10 green or black pitted olives
1-2 tbsp olive oil (optional)
Salt and pepper to taste
Place all ingredients in a food processor except olive oil. Blend until all ingredients are well blended. Taste and add salt and pepper and more olive oil if you want a smoother texture.
