Apple Brown Betty
Ingredients


A Brown Betty is similar to a fruit cobbler only it uses breadcrumbs instead of whole bread. I personally think cooked apples taste best with as little sugar as possible, better to play up the cinnamon and let the natural flavor shine through. This recipe was adapted from a recipe of the same name created by Jean Kressy for the Boston Globe.
Makes 6 servings

Cooking Instructions

Crumbs
4 slices ( 4 ounces) white or whole wheat bread, made into crumbs about 2 cups
1 tbsp butter
Fruit
4 large apples peeled, cored and cut into chunks about 4 cups (The smaller the chunks the shorter the coking time)
2 tbsp granulated sugar
1/3 cup raisins
1/2 teaspoon cinnamon
1/2 cup apple cider
for serving:
1/2 cup heavy cream whipped until it holds soft peaks with 1 tbsp granulated or confectioner sugar added

1. Pre-heat oven to 375 degrees . In a clean dry skillet, toast the bread crumbs until crisp and golden, but not burned. Add the butter and as it melts toss with the crumbs, remove from heat and set aside.
2. Spray the bottom of an 8x8 oven proof pan with vegetable oil to prevent sticking.
3. Combine; all ingredients (except the cream) in a bowl.
4. Sprinkle one-third of the crumbs into the bottom of the prepared dish. Top with half the fruit mixture, sprinkle with half the remaining crumbs. Top with remaining fruit and finish with the crumbs.
5. Cover with foil and bake for thirty minutes, remove foil and bake 10 minutes more. Serve warm with a dollop of cream.
