Something new and fun to do with apples. The larger the apple, the longer the cooking time. If you have a really large apple, microwave it for one minute before you cover it in the meringue, this will start the cooking process and guarantee it will be cooked through.
Serves two
1 egg white
1 tbsp sugar
1 teaspoon vanilla
2 apples, peeled, core removed
1 tablespoon butterscotch or chocolate bits
Preheat oven to 350 degrees. Beat egg whites until foamy, and beat until stiff but not dry. Add sugar slowly, beating after each addition. They should hold peaks when the mixer is lifted from the whites.
Place half of butterscotch pieces in the core of each apple, place on a baking sheet lined with parchment paper bake for 25-30 minutes, until the meringue is browned but not so long that it burns, check it after 20 minutes and remove if the edges of the meringue look like they are burning.
Serve warm.
