This makes a good size batch of granola, about 4 cups in total use only 2 tbsp as a garnish to top each parfait. Store remaining granola in an airtight container.
Makes 4 portions with half the granola left for another day.
2 cups rolled oats
1/2 cup brown sugar
1/3 cup honey
1/2 tsp cinnamon
1 cup nuts, chopped ( almonds, pecans, walnuts or pistachios)
4 cups strawberries hulled and cut in half
2 cups lemon yogurt or grate the peel from a whole lemon and mix with 2 cups vanilla yogurt
16-20 red grapes cut in half to be used as a garnish
1-Make the granola up to 24 hours ahead. Preheat oven to 300 degrees. Combine the oats, sugar, honey, cinnamon and nuts in a bowl and mix well. Line a baking pan with parchment paper or aluminum foil and spread the oat mixture in an even layer. Bake 40 minutes. Remove from oven allow to cool then break into pieces. Place in an airtight container or plastic bag once it is cold.
2- Place about 1/4 cup of the yogurt in a bowl or goblet, top strawberries and garnish with the grapes.
