This may not sound very special but it is. It is a recipe adapted from the Harvard School of Public Health Healthy Kitchen, Healthy Lives 2009 conference. The combination of flavors and textures turns ordinary summer ingredients into something quite delicious.. Assemble the dish right before serving in pretty goblets and you will have a desert everyone will enjoy.
Makes eight portions
2 cups rolled oats
1/2 cup brown sugar
1/3 cup honey
1/2 tsp cinnamon
1 cup nuts, chopped ( almonds, pecans, walnuts or pistachios)
4 cups watermelon cubes or balls
2 cups lemon yogurt or grate the peel from a whole lemon and mix with 2 cups vanilla yogurt
16-20 red grapes cut in half to be used as a garnish
1-Make the granola up to 24 hours ahead. Preheat oven to 300 degrees. Combine the oats, sugar, honey, cinnamon and nuts in a bowl and mix well. Line a baking pan with parchment paper or aluminum foil and spread the oat mixture in an even layer. Bake 40 minutes. Remove from oven allow to cool then break into pieces. Place in an airtight container or plastic bag once it is cold.
2- Place about 1/4 cup of the yogurt in a bowl or goblet, top with watermelon, granola and garnish with the grapes.
