My friend Conni taught me this method of cooking steak. It is the perfect recipe when you have quests because it gives you time to remove the meat from the grill and get everyone to their seats.
Serves four
4 New York or Sirloin Steaks about 3/4 inch thick
salt and pepper
Heat an outside grill until very hot, 450 degrees if you have a temperature gauge or hot enough so you cannot hold your hand over the heat for more then three to four seconds.
Preheat your indoor oven to 200 degrees.
Pat the meat dry, season with salt and pepper. When the grill is hot enough sear the steak on high heat about three minutes on each side and transfer to a heated platter. Continue cooking in the preheated oven for twelve minutes for rare or up to 15 minutes for medium done.
