Fried chicken went off my menu years ago, but I still love the crispy texture. This recipe is a great way to get the flavor and crunch of fried food, please do not be scared away by my use of yogurt, it does not give it a sour taste. Yogurt is an easy substitute to soaking the chicken in buttermilk, it adds flavor and moisture.
Serves six
Preparation time: 10 minutes, Total time 55 minutes
3 pound chicken cut into 8 or 10 pieces
1 cup plain yogurt
1 cup seasoned bread crumbs
1 cup crushed cornflakes
Preheat the oven to 375 degrees. Mix together the bread crumbs and cornflakes and set aside. Remove as much skin from the chicken pieces as you can. Roll each piece of chicken in the yogurt so it has a light cover then roll in the crumb mixture. Place the coated pieces on a lightly oiled baking dish. Bake 45 minutes.
