Serve this along with grilled fish and chicken or use it as a topping on fresh greens as pictured above in a salad. When preparing, use only 1 tablespoon of vinegar to start, and add more to suit your tastes.
Makes 2 ½ cups
1 red pepper, seeded and chopped
3 tart apples, peeled, cored and chopped
1/2 c diced celery
1/2 red onion, chopped
1-2 tbsp cider vinegar
2 teaspoon sugar
¼ tsp pepper
1/4 teaspoon salt
Combine all ingredients, toss with the vinegar and sugar, pepper and salt. Refrigerate for one hour then serve on top of cooked fish or poultry or fresh greens.
