Bananas are one of the few fruits that we cannot squeeze juice from; this means every bite is dense with calories, which is why I say to stick to one per day when trying to lose weight. Bananas are also a natural source of potassium and fiber but carry only small amounts of Vitamin C or iron. They are picked green and ripen in storage and spoil quickly once ripe. Keep in a cool dark spot, and, once ripe refrigerate. The skin turns black, but the fruit does not discolor. Ripe bananas can be frozen whole in their skins and used in baked muffins and banana bread.
