What a treat when cherries first come in season! I think they are wonderful, and when I cannot get them fresh, I buy frozen dark sweet cherries for cooking. Sweet cherries arrive in late spring, and they are picked ripe, so it is important to buy fresh. Look for a very dark color with bright, plump, glossy skin and clean, firm attached stems. Bags with leaking cherry juice are a sure sign of decay. Cherries are a great source of potassium. These are a great wet snack—no peeling or chopping, just eating!
No cooking required- just serve raw in fruit salads or eat by the handful. To use in baking try the classic cherry clafouti recipe on the web page for a special dessert.
