Peaches and their smooth-skinned relative the nectarine come in white or yellow flesh colors. They can ripen and develop flavor after picking, but they can be mealy-tasting if stored at too cold of a temperature—something you may not know until you bite into one. Try to find fresh, locally grown varieties that are ripe; they will taste the best. Peaches are a good source of fiber and vitamins. Buy organic.
Once ripe they can keep in the refrigerator, but use within five to seven days. Fruit cut in half and pitted can be frozen.
