These large prickly fruits are available year–round, but prices are best in late spring when they are most abundant. A ripe pineapple has a very pleasant aroma. Choose the largest pineapple you can, as this will have a greater proportion of edible fruit. Pineapple can ripen at room temperature within a few days.
To prepare: Slice the top off the pineapple. With a sharp knife, cut long strips of the outer skin; continue until all skin is removed. Cut in half, then quarters. Again with a sharp knife, cut the pointed side of the quarter to remove the hard center core. Do this on all 4 quarters then cut into chunks.
Once ripe store in the refrigerator. Use within a few days.
Frozen pineapple is an easy and nutritious treat. Dole brand has cubes that have no sugar added and can be ready for eating after thawing for just twenty minutes. Canned pineapple in water or juice is also a convenient and economical source.
