Italian Vegetable Bake

Apple Crisp

All three recipes in this menu bake at 350 degrees. The Italian Vegetable Bake cooks the longest so put it in the oven first, followed by the meat loaf. While these two cook assemble the salad and refrigerate. Make the Apple Crisp, and cook it right alongside the other two recipes or bake it while you eat dinner and you will have a yummy, warm dessert just when you want it.

This recipe is adapted from the National Heart, Lung, and Blood Institute We Can! project. The ground beef can be replaced with ground turkey or a combination of both.
1 pound ground beef, extra lean
½ cup tomato paste (4 oz)
¼ cup onion, chopped
½ cup green peppers, chopped
½ tsp mustard (optional)
¼ tsp black pepper
½ tsp hot pepper sauce ( optional)
2 cloves garlic, chopped

½ tsp ginger, ground
1/8 tsp nutmeg, ground
1tsp orange rind, grated
½ tsp thyme crushed
¼ cup bread crumbs


This colorful low-sodium cholesterol-free vegetable baked dish is prepared without any added fat.
1 can (28 oz) whole tomatoes
1 medium onion, sliced
½ pound green beans sliced
½ pound fresh okra, cut into ½ inch pieces or 3/4 C 1/2 10-oz pkg frozen okra
¾ c finely chopped pepper
2 tbsp lemon juice
1 tsp fresh basil, or 1 tsp dried basil, crushed
1 ½ tsp chopped fresh oregano or ½ tsp dried oregano
3 medium zucchini, cut into 1-inch cubes
1 medium eggplant, pared and cut into 1-inch cubes
2 tbsp grated parmesan cheese

Simple Salad
Romaine, Red or Green Leaf Lettuce
Salad Dressing or lemon and oil

Easy Apple Crisp
One of the easiest and most popular fruit based desserts
Serves Six
5-6 apples
1 teaspoon cinnamon
1/2 cup uncooked oatmeal
1 tablespoon butter, melted
1/4 cup brown sugar
2 tbsp flour

Cooking Instructions

Srumptious Meatloaf
1 Mix all ingredients together. Place in a lightly oiled loaf pan ( preferably a pan with a drip rack) and bake 350 degrees 50 minutes
Makes 6 servings 193 calories each serving using ground beef.
Italian Vegetable Bake
1. Lightly oil a 9x11 lasagna pan . Preheat oven 350 degrees. Drain and coarsely chop tomatoes. Save liquid. Mix together tomatoes and reserved liquid, onion, green beans, okra, green pepper, lemon juice, and herbs. Pour into baking dish. Cover and bake for 15 minutes.
2. Mix in zucchini and eggplant and continue baking, covered, 50 more minutes or until vegetables are tender. Stir occasionally.
3. Sprinkle top with parmesan cheese just before serving.
Yield: 18 servings--Serving Size: 1/2 cup
Each serving provides:
Calories: 36
Total fat: less than 1 g
Saturated fat: less than 1 g
Cholesterol: less than 1 mg
Sodium: 86 mg

Simple Salad
Wash and tear your favorite lettuce into bite size pieces , top with your favorite dressing or drizzle with olive oil and lemon juice.

Easy Apple Crisp
Calories : 165 for one serving.
1. Slice apples in baking dish (peeled or unpeeled).
2. Sprinkle cinnamon over apples.
3. Mix remaining ingredients with a fork and sprinkle on apples.
4. Bake at 350 degrees F for 35 minutes.
