Summer Fruit Salad

A fruit salad can serve as an appetizer, dessert or a snack. When served as an appetizer serve the fruit on a lettuce leaf and keep portions small , the goal is to whet not satiate the appetite. As a dessert serve it with a small scoop of fruit sherbet. As a snack serve it to kids in an ice cream cone instead of a bowl.
Makes approximately 6 cups
1 Honey dew melon
1 pint strawberries, sliced
1 peach, cut into cubes
1 cup seedless grapes, sliced
Juice from 1 lime
1 tbsp minced fresh mint leaves

Cooking Instructions

Cut the melon in half, shape melon pulp into balls with a scoop. Combine fruit in a bowl, drizzle with lime juice and toss with the mint. Refrigerate and serve cold.
Calories about 120 per cup
