Watermelon and Tomato Salad

A perfect mixture of tangy and sweet. The directions below make four salad plates. I have brought this to picnics in one large bowl, chopping the tomatoes instead of slicing which makes it easier to serve.
Serves four
2 large tomatoes. rinsed and cut into 6 slices
2 tbsp apple cider vinegar or white balsamic vinegar
1 tbsp olive oil
2 tbsp fresh basil, rinsed, dried ad chopped ( or 2 tsp dried)
4 cups diced watermelon, with seeds removed
1/4 tsp salt
1/4 tsp ground black pepper

Cooking Instructions

Arrange tomatoes slices on four salad plates.
Combine vinegar, oil, and basil in a bowl, and mix well.
Add watermelon, and gently toss to coat evenly.
Spoon watermelon over the tomatoes.
Top with salt and pepper, and serve.
