Just a little bit of preparation turns apples and carrots into a fun and very delicious snack. The lettuce leaves become the bowl, and most kids really like filling the lettuce cups. Sprinkle some blue cheese crumbles over the fruit and it will be a hit as an appetizer at your next dinner party too. Choose lettuce with well cupped leaves, Boston lettuce works best.
4 servings
10-12 leaves from a head of Butter or Boston lettuce, rinsed
2 carrots, peeled
2 apples, quartered and cored but not peeled
2 tbsp walnuts toasted (optional)
1/2 cup raisins (optional)
1/2 lemon
1. Grate the carrots and apples, stir in the raisins if you are using them and squeeze the juice of the lemon over the mixture and stir. Refrigerate until ready to use.
2. Fill each leaf with 2 tbsp of the carrot-apple mixture. Top with the chopped walnuts and eat the whole thing.
