Three Seed Whole Wheat Toasting bread

Use this bread as a replacement for granola bars. Buttermilk is used in quick breads to keep the gluten in the bread tender, it also prevents the walnuts from turning blue and it tastes good. When you do not have buttermilk, substitute with water downed plain yogurt (not Greek because the protein will change the texture) or make your own buttermilk by combining 1 tbsp. lemon juice or white vinegar, to one cup of milk let sit for a few minutes before using in the recipe.
Prep time: 10-15 minutes Total cook time 65 -70 minutes (most of it unattended)
Makes one loaf, 10-16 servings
1 cup all-purpose flour teaspoon salt
1 cup whole wheat flour 3 large eggs, lightly beaten
1 cup rolled oats cup canola oil
1/3 cup sunflower seeds cup honey or brown sugar
1/3 cup pumpkin seeds 11/2 cup buttermilk
1/3 cup chopped walnuts 1 tablespoon sesame seeds black or white
1 tablespoon baking powder

Cooking Instructions

1. Preheat oven to 350 degrees. Spray a 9 x5 bread pan with oil.
2. In a large bowl combine flours, oats, seeds, nuts, baking powder and salt, blend with a spoon and set aside.
3. In a small bowl combine the eggs, oil, honey and buttermilk, mix with a spoon until the eggs are well blended with the milk. Stir in nuts and seeds. Pour the milk/nut mixture over the dry ingredients, stir and fold until combined. The batter will be soupy. Using a spatula, scrape the batter into the greased pan. Sprinkle the remaining sesame seeds over the dough and with a moistened spoon press the seeds into the dough before baking
4. Bake 50 to 55 minutes. Turn out on a rack and cool before slicing.
This bread can be frozen, slicing before freezing will make it easy to grab one slice at a time.
Make this your own
Change the flour; try spelt flour, replace the oats with wheat germ, or experiment with different seeds and nuts just keep the pieces small. Try toasting nuts and seeds first and see if you like the flavor better. For sweeter bread replace some of the nuts with dried fruit.
