Vegetable Barley Soup

Soup is an easy and delicious way to combine healthful ingredients such as whole grains and vegetables .The best thing is you can assemble all the ingredients and while the soup simmers put your feet up and read, take a walk or finish those nagging chores.

Makes six servings: 96 calories per serving
1 tbsp canola oil
8 ounces to 1 pound sliced mushrooms
˝ cup pearl barley
2 cups grated carrot
1 large bay leaf
4 cups vegetable or chicken broth

Cooking Instructions

1. In a two quart pot sauté the mushroom in the oil until soft about three minutes.
2. Add all remaining ingredients cover and simmer 45 to 60 minutes until the barley is plump and soft.
3. Remove bay leaf* and serve warm

*In our house starting at a young age we left the bay leaf in recipes and decided who ever got it in their dish would have good luck.
