I like this because the edges of the potato get really crispy and if you are a garlic lover you can double the amount used in this dish.
4-6 servings
1 pound red new potatoes
1 tbsp olive oil
salt and pepper
2 fresh garlic cloves peeled and chopped
Preheat oven to 350 degrees. Boil the potatoes whole in salted water until tender but still firm and holding their shape. Drain and place in a lightly oiled oven safe dish. Using a strong fork or a potato masher press the potatoes so they "smash" and break into large pieces but still hold together somewhat. Toss with olive oil salt, pepper and garlic so each potato has a little oil. Bake in the oven for thirty minutes or until edges are crisp and golden.
To prepare ahead assemble the dish up until the final cooking step in the oven instead cover and refrigerate and finish final 30 minutes of baking before you are ready to serve it.
