Acorn, and butternut, seem to be the most popular of the winter squash but there are other equally delicious varieties including: butter cup, hubbard ( blue and green), delicious, and banana. All can be prepared using the same recipe-cooking times vary depending on size. A good squash should have a hard tough skin to indicate ripeness, and it should feel heavy when held. Squash is a superb source of vitamin A and fiber .
To prepare: cut in half, scoop out seeds and bake 350 degrees for at least 60 minutes. It should feel tender when poked with a fork. For faster cooking use a micorwave: place the squash cut side down and microwave for 7-8 minutes, let rest for two minutes.
To mash: scoop out cooked squash, discard skin and mash with a hand masher or use an electric mixer for a very smooth texture. Add a small amount of butter for flavor, season with salt and pepper. You can even add cinnamon, nutmeg ,a splash of orange juice or maple syrup for a delicious new flavor.
