Tacos: Date Added: 27 Oct 2010 Ingredients:

Fresh vegetables along with traditional seasonings are used to flavor these tacos. Corn, avocado and extra lettuce and tomatoes can all be served as optional side dishes if you like.
4 servings
1/4 cup vegetable, beef or chicken broth
1 small onion minced
1 carrot peeled and minced
1 tbsp chili powder
1 tsp ground cumin
clove garlic minced
1 pound ground meat: beef or turkey
8 - 1 oz taco shells soft or hard
1 cup lettuce
1 cup chopped tomato
1 cup salsa
1 cup chopped cucumbers
2 cups cooked corn
Fresh lime(optional)
Fresh coriander chopped (optional)

Cooking Instructions:

In a medium skillet heat the broth to boiling, add the onion, carrot and garlic, chili powder and cumin, stir reduce heat and cook for three minutes. Add the ground meat and cook for ten to fifteen minutes, stirring occasionally, until it is hot and well cooked. Cover and cook on low heat for 5 minutes more to blend flavors, add water if it looks dry.
Put the lettuce, tomato salsa cucumbers and corn in small bowls on the table along with the cooked meat and taco shells. Allow everyone to build there own tacos. Squeeze lime over the taco and top with coriander if you are using it.
