You can substitute ground turkey or use Morning Star Crumbles (available in the freezer section) to replace the beef. The peppercorns add a lot of flavor just be careful not to bite down on them they will be very spicy.
Six servings

1 pound ground beef, ground turkey or Vegetarian Morningstar Crumbles*
1 medium onion diced
1 cup diced carrots
1 (28 ounce) can crushed tomatoes
2 (14.5 ounce) cans beef broth
1 cup potato chopped
9 whole black peppercorns
1 bay leaf

Cooking Instructions:

1. In a large saucepan or Dutch oven brown the beef with the onions over medium heat until meat is no longer pink. Add all remaining ingredients. Bring just to a boil, reduce heat, cover and cook at least 20 minutes or until the potatoes and carrots are tender.
2. Serve warm or refrigerate until ready to serve. Can be frozen for 6 weeks.
