Beef Tenderloin Steak
Baby Red Potatoes
Summer Squash
Carrot Coins
Grilled Peach Melba

Cooking Instructions:

Steak and Potatoes
4 beef tenderloin steaks, 1 inch thick ( 6 oz each)
1 tbsp olive oil
1 pound baby red new potatoes plus 1 tbsp butter and 1 tbsp milk, salt and pepper.

In a medium saucepan, bring potatoes and enough water to cover by 1 inch to boiling; cook 15 minutes or until fork tender. Drain well. Return to saucepan, add butter, milk, salt and pepper; mash until nearly smooth. Keep warm until ready to serve. Calories: 5 ounces cooked 265.

In large non stick skillet on medium-high, heat 1 tbsp oil until shimmering; sear steaks 3 minutes or until browned. Continue to cook steaks, turning 6 to 7 minutes or until internal temperature registers 135 F for medium rare. Remove steaks; let rest 5 minutes, keep warm.

Summer Squash
2 medium yellow squash ( 8 oz. each), cut into inch thick slices
2 medium zucchini ( 8 oz. each) cut into inch-thick-slices
1 tbsp fresh chopped herbs tarragon, rosemary or flat parsley
2 tablespoons lemon juice
1 tsp butter
Place steamer basket and 1 inch of water in 4-quart saucepan. Heat water to boiling. Add squash; cover and reduce heat to medium. Steam vegetables 8 minutes or until tender. Transfer to bowl: toss with lemon juice, herbs, salt and pepper to taste

Carrot coins
2 cups carrot coins
1 tablespoon olive oil
1 tsp apple cider vinegar or lemon juice
2 tsp honey salt and pepper to taste

Microwave carrots covered until tender. In bowl, combine carrots with oil, vinegar, honey and salt and pepper to taste.
Calories: 65 for one portion
Grilled Peach Melba
2 large peaches cut in half, pit discarded*
2 cups vanilla ice cream
1 cup frozen raspberry thawed, mashed with a fork
Preheat outdoor grill or indoor grill pan, Place peach halves on hot grill and cook 5 to 6 minutes or until lightly charred and tender.
To serve, place 1 peach half in a dessert bowl; top each with cup ice cream and raspberries
* In winter, instead of grilling fresh peaches, heat canned peaches in a microwave
Calories: one portion 165 ( made with 1/2 cup frz yogurt or low fat ice cream at 100 calories)
