Makes four servings
2 cups carrot coins
1 tablespoon olive oil
1 tsp apple cider vinegar or lemon juice
2 tsp honey salt and pepper to taste

Cooking Instructions:

Microwave carrots covered until tender. In bowl, combine carrots with oil, vinegar, honey and salt and pepper to taste.
