Seafood Pasta: Date Added: 16 Nov 2011 Ingredients:

I buy frozen fish when the price is right . Freezing tends to make fish a bit dry and a little tough so I cook it quickly in a sauce to keep it moist and tender.
Makes four servings

1 tbsp olive oil
1 onion, chopped
1 green pepper chopped
8 ounces sliced mushrooms
1 clove garlic, chopped
1- 28 ounce can crushed tomatoes
1 bay leaf
1 pound frozen fish fillet such as haddock, Pollock or cod , cut into 2- inch cubes or frozen deveined shrimp
1 tbsp capers ( optional)
1/4 cup black olives, chopped ( optional)
8 ounces spaghetti or fettuccine

Cooking Instructions:

1. In a large pot heat oil, add onion, pepper, sliced mushroom, and garlic. Cook on medium heat about ten minutes until the ingredients soften, and the onions turn golden in color. Add the bay leaf and tomatoes, cover and simmer ten minutes until it is very hot.
2. Add the fish to the hot sauce cook until it is hot and cooked through about 7 to 10 minutes. Prepare the pasta according to instructions, serve over the hot pasta.
About 300 calories per serving without the pasta
