Dark Sweet Cherry Meringue Mini-Pies: Date Added: 1 Feb 2012 Ingredients:

Frozen cherries have their own natural sweetness. Combine dark cherries with the crunch of a graham cracker crust and the delicate, sweet texture of meringue and they are delicious. Frozen cherries are pitted , ready to cook and packed in their own juices with no sugar added.. You can use this recipe to make an eight inch pie just read instructions below.
Cherry Filling:
Makes six individual mini-pies : 213 calories per mini-pie
2 tablespoons granulated sugar
2 tbsp. cornstarch
1/8 tsp. salt
1 pound frozen Dole Dark Sweet Cherries, thawed, reserve juice
1/4 tsp. almond or vanilla extract
6 Keebler Ready Crust Mini Graham Cracker Pie Crust
Meringue Topping
2 egg whites
3 tablespoons sugar
1/2 teaspoons almond or vanilla extract

Cooking Instructions:

Place sugar, cornstarch and salt in saucepan. Measure cherry juice and add enough water to equal 1/2 cup. Stir in cherry juice, bring to a boil, reduce heat to medium and cook until thick and glossy about 3 minutes Remove from heat. Stir in cherries and almond flavoring. Fill each mini pie crust with an equal amount of filling
Preheat oven to 350 degrees. Beat egg whites until foamy, add sugar slowly, beating after each addition, continue beating until stiff. They should hold peaks when the mixer is lifted from the whites. Divide egg whites evenly among each of the cherry filled pie crusts. Bake in the preheated oven for 20- 25 minutes or until the tips of the egg whites are golden.

To make a Dark Sweet Cherry Pie you will want to double the recipe above, using a total of 2 pounds of thawed cherries and fill a prepared eight or nine inch pie crust and bake as directed above .
