These are most abundant in the summer months and taste best when eaten fresh from the vine. Look for cucumbers that are firm with a good green color, chose ones that are not too large. A withered skin indicates it is old. If the skin has not been waxed adults can wash a cucumber and eat it with the skin on. They are not a rich source of nutrition and because they are 96% water they are extremely low in calories .




Cooking Instructions:

To prepare: Peel and slice into sticks coins or quarters. Scrape out the seeds and chop into finger food for little ones or use in salads or mix with yogurt dill and lemon for a healthful summer salad.
Tip: Cucumbers make a great replacement for crackers when served with dip.
Storage: Depending on age, a cucumber can last 4-5 days in the refrigerator.
