This recipe appeared in the Boston Globe Food Section and it is so easy I am hoping you will try it as a substitute to store bought tomato sauce. Italy's Little Kitchen created the recipe, and recommends : you "use a good brand of canned whole tomatoes, crushed in a bowl yields the most flavorful results". Makes 2 quarts 498 per recipe or 62 calories per cup

3 tbsp olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
2 cans ( 28 ounces each) whole peeled tomatoes, crushed in a bowl with your hands
2 tsp fried oregano
1 cup coarsely chopped basil
Salt and pepper to taste

Cooking Instructions:

1. In a large saucepan over medium heat, heat the oil. Add the onion and garlic. Cook stirring often for eight minutes or until onions are soft.
2. Add the tomatoes and their juices, oregano, basil, salt, and pepper. Bring to a boil, lower the heat and cover the pan.
3. Simmer 45 minutes, stirring often or until the sauce has thickened. Taste for seasoning, add more salt or pepper if you like.
